Be A Better and a Smarter Cook
We chose the name "Maureen's Cornucopia" because it symbolizes the harvesting of fruits and vegetables. It is the reward of all the hard work of the American farmer, and his effort to provide for his family with the six basic food groups: Meat, Grains, Vegetables, Fruits, Milk and Oils. The Cornucopia is also known as the “Horn of Plenty“ and in America it is associated with the American tradition of Thanksgiving.
Maureen's Cornucopia is an accumulation of knowledge that has been handed down from generation to generation. Maureen's Cornucopia is a wealth of information needed to return back to the basics of preparing a meal. Cooking from scratch has become a lost art. Whether you are roasting turkey, making bread or learning to cook with herbs and spices. If you want to provide a healthier meal for your family then you need to re-learn the proper way to cook and the handling of raw meat and ways to prevent cross contamination of food. This site covers the availability of fruits and vegetables. It covers what to look for when selecting food. Maureen's Cornucopia covers the proper way to prepare, store and preserve food. America is the melting pot of different cultures and traditions and the food we eat today is a result of our culture and traditions.
Historically, back when my grandparents were raising their families “Home Economics” meant soap making, spinning yarn and thread, weaving cloth and rugs, and patchwork quilting. More skills were needed for cooking on a wood burning stove, churning butter, baking bread, and preserving food by drying and by glass-jar canning.
During World War II all of that changed. The men were off fighting a war and the women left the homes and went to work in the factories. And after the war many women who had lost their husbands remained in the work force in order to provide for their families.
Today Home Economics covers such topics as consumer education, institutional management, interior design, home furnishing, cleaning, handicrafts, sewing, clothing and textiles, commercial cooking, cooking, nutrition, food preservation, hygiene, child development, managing money, and family relationships.
Over the past decades it has become necessary for both the husband and wife to work in order to provide for the family. Many families are now struggling just to put food on the table. Our children are a product of a culture of pre-packaged and fast food that is giving rise to millions of young children suffering from medical problems from high blood pressure to diabetes. Across America the rate of obesity is growing faster than ever.
Cooking from scratch not only will provide you with a healthier meal but it also provides the way to cut food costs. The numbers show that going back to preparing meals from scratch would not cost more at all, but could in fact save money in the long run.
Pre-packaged foods are loaded with salt, fat and a host of other ingredients. I recently read that a pre-packaged bean burrito consists of more than 35 ingredients and salad dressings that contain more than 19 ingredients.
There is a counterrevolution starting to sweep the country and it's starting in the schools in Colorado and other parts of the country. People need to re-learn the forgotten arts like kitchen math, and to brush up on safe handling of raw meat and the proper cooking temperatures for meat. Learning about the cross contamination of foods that prevent food-borne illnesses like E. coli. These are the skills that have been forgotten or lost during the past few decades.

About Us
My husband and I were both born and raised in New Hampshire. My heritage is French Canadian and Irish Quebecers, and his is French Canadian, English, German, and Native American. Between the both of us we have a mixture of recipes knowledge that has been handed down from our ancestors who were farmers and hunters.
The ability to create healthy balanced meals for our families from the basic simple ingredients is being lost due to the increased production of processed and convenience foods that are lacking in nutrition and filled with preservatives and contain empty calories. I hope that you find this information informative and useful. Enjoy Your Journey – Maureen (Marcoux) Anthony
